Melamine and MDF are not the same.
In cabinetry, “Melamine” typically refers to a particleboard sheetgood with a white (or other color) veneer surface on it. Particleboard itself is woodchips and glue. The woodchips are fairly coarse, the veneer skin provides a smooth and easily cleaned surface to the sheetgood.
MDF is a more refined or engineered product. It’s made with small woodchips that are steamed so they expand, then the chips are combined with a binder and formed into a sheetgood under pressure. MDF has a very smooth surface, its core has a fine texture, much finer than particleboard.
MDF is more dimensionally stable than particleboard.
Both suffer when exposed to moisture, although there are exterior grades of MDF readily available.
For paint-grade cabinetry, my first choice would be plywood (I prefer birch), then MDF.
For stain-grade, ply or MDF-core ply would be fine.
Just be wary about using particleboard, and to a lesser extent, MDF, near plumbing.
MDF is now manufactured with a fraction of the formaldehydes that it used to have, it’s considered a low-formaldehyde product.
