I found a recipe online for the pita bread but this is actually a copy of Jeffrey Alford and Naomi Duguid’s recipe which appears in Baking with Julia. The person who posted it just cut off several paragraphs, so it does not go into all the little nuances of baking this bread (and it’s just too long for me to put it all here).

At any rate, here’s the bread baking in the oven; we first tried this recipe two years ago, and our pitas puffed way more nicely that time, almost ball-like in the oven. The trick probably is to keep them small and round, no pulls, before gently sliding them onto the oven tiles.
