BLACK BEAN AND/OR BEEF SOFT TACOS

I’m only giving a recipe for the seasoning as everything else is store-bought.

3 tablespoons cornmeal (omit if staying away from corn)

3 tablespoons chili powder

1 tablespoon onion powder (or 2 tablespoons dried onion)

1 tablespoon sea salt

1 teaspoon ground cumin

1 teaspoon ground dried oregano

1 teaspoon parsley

1 teaspoon garlic powder

1 teaspoon sugar

1 teaspoon smoked or sweet paprika

1 teaspoon cocoa powder

This would be enough for about 3 lbs. of meat, beans, or meat/bean combination. I like mixing a big batch and use it as needed; make more when I run out. The individual ingredients can of course be adjusted to taste.

If using meat, brown meat first, breaking it up. Then pour out the fat, add a bit of water and seasonings, and cook over medium heat until thickened. If using beans only then dump everything into the pot all at one time. Halfway through cooking start mashing up some of the beans to add to the creaminess of the filling.

Serve with tortillas, shredded lettuce, shredded/grated cheese, salsa, guacamole (I ran out of avocados so not tonight), and sour cream or yogurt. Rice if you have people avoiding gluten. If using beans only you might like to add a bit of lime juice and some chopped cilantro.
