While I don’t mind cauliflower rice today as much as I did 15 years ago, I still would rather eat a bowl of roasted cauliflower florets. I vary the seasoning from batch to batch. This one has a touch of sweetness, and heat from the cayenne and paprika.

Spiced Cauliflower Florets

Servings: 6

Ingredients
  

  • 1 large cauliflower cut into florets
  • 4 tbsp olive oil, avocado oil, or melted butter or butter substitute whatever fat works for you
  • 1 tsp sugar optional, but I like it for caramelization
  • 1/2 tsp salt
  • 1/2 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cinnamon

Equipment

  • parchment lined baking sheet

Method
 

  1. Preheat oven to 500 degrees F.
  2. In a large bowl, toss cauliflower florets with oil.
  3. In a small bowl, combine the rest of the ingredients.
  4. Sprinkle spice mixture onto the cauliflower and toss until evenly coated.
  5. Spread on parchment-lined baking sheet in one layer.
  6. Roast 20 minutes, stirring once, until a nice golden brown and crisp on the tips and edges here and there.
