Sauteed mushrooms should be in everyone’s culinary repertoire. By themselves they’re an awesome side dish, but also they make perfect fillings for omelettes, and toppings for pizza or steak or tartine or smørrebrød. They can also be used as the base for soups. Just add broth and other vegetables, maybe an egg or two, and you’ve got yourself a hearty soup in no time.

I love this recipe because the high-heat cooking results in bouncy, juicy mushrooms.

Sauteed Mushrooms with Herbs

Servings: 4

Ingredients
  

  • 4 tbsp extra-virgin olive oil
  • 1 24-oz pkg crimini mushrooms I get the one from Costco
  • salt and freshly ground black pepper to taste
  • 4 cloves garlic, minced
  • 3 tbsp butter or butter substitute I used Earth Balance
  • 4 thyme sprigs, or 2 tsp. dried thyme
  • 1/3 cup wine (red or white will work, I used leftover soju for this)
  • 2 tbsp chopped Italian parsley

Method
 

  1. Heat oil in large skillet over medium-high heat.
  2. Add mushrooms and leave for 3-5 minutes without stirring to caramelize.
  3. Stir and leave another 2-3 minutes to caramelize again.
  4. Reduce heat to medium. Season with salt and pepper to taste.
  5. Cook 5 more minutes, stirring occasionally, until golden brown.
  6. Add garlic, butter (or butter substitute) and thyme. Cook 2 more minutes.
  7. Add wine and increase heat to high, stirring a few more times, until mushrooms have absorbed the wine.
  8. Sprinkle with parsley and serve.
