Carrot salad is one of those things that my whole family loves (except the youngest). It’s quick and easy to prepare. If I’m being lazy it’s really just carrot-vinegar-sugar-salt. But every now and then I add in a few things, like raisins perhaps. Or mayo. In one of my Facebook groups (Estrogen Dominance) they suggest a carrot salad everyday.

I’m not providing amounts for this recipe because it really is a super-simple salad. Start with the freshest carrots you can find, preferably from your local farmer. (Got mine from Farm on Central.) Peel and shred (by hand or by machine). Toss with the rest of the ingredients.

Moroccan Carrot Salad

  • carrots
  • olive oil
  • salt
  • lemon juice
  • large pinch sugar
  • orange flower water

Instructions
 

  • Shred the carrots. Toss with the rest of the ingredients to taste. That's it!
